Who does not love chocolate? This book is the very celebration of one of the sweetest and most decadent treats of life- all things chocolate! I read cookbooks just like I would read a novel- cover to cover, making special notations and marking recipes to return to. This book, Intensely Chocolate, by Carole Bloom is educational, informative, comprehensive and most importantly, a mouthwatering, visual delight. If you have had the pleasure of owning any of Carole Bloom's other cookbooks (my favorite for any level of baker- The Essential Baker) you will recognize not only her tantalizing, delicious recipes but "Making a Change" suggestions for creating a whole new "take" with your own special "add-ins" or twists. Thankfully here is one author that gives us not only gives the baker consistantly accurrate measurements and methods, but sources for ingredients & equipment and storage instructions as well.I am not always successful with using chocolate as the staring ingredient, but Carole Bloom's book has given me the confidance to become successful- My favorites include: semisweet chocolate truffle tart, milk-chocolate toasted pecan tartlets, and bittersweet chocolate-salted caramel truffles.Every woman I know loves some form of chocolate and this book gives any baker or chocolate lover the open door to enjoy, indulge and share their chocolate passion with those around us fortunate enough to share these wonderful receipes. I have given this book as a gift to several co-workers and friends- not just for Valentines Day any woman would love to add this delicious book to her working cookbook collection. Here's to more chocolate!

we found this book to difficult for new cooks. It would be nice if the use of sweetners other than sugar were discussed.
What a complete and total disappointment.Why would someone buy a book titled Intensely Chocolate? Because they like a true, and indeed, intense CHOCOLATE. Because they don't want to pick nuts or fruit and peanut butter lumps and swirls of gooand bits of salt out of their CHOCOLATE.They don't want to sink their teeth into competing flavors. I should think that anyone drawn to the word "intense" is looking for that one dessert that most people associate with the adjective "intense". CHOCOLATE.And we sure aren't looking for WHITE 'chocolate. White choclate is, to quote a Buzzfeed article "a big fat lie". It's not chocolate. It's the waste fat that is poured off when they make choclate nibs. It tastes nothing like chocolate.Fully 1/5th of the recipes in this book is are devoted to white chocolate.Milk chocolate is the choclate preferred by young children and eople who are only mildly fond of choclate. It is the antithesis of intense. 1/5th of the recipes are devoted to milk choclate.Cocoa is the powdered form of choclate, and is used for the milder verisons of choclate. By definition, cocoa is NOT intense. It's chosen when a light flavoring is wanted. 1/4 of the recipes are about cocoa.That leaves significanlt less than half of the book for legiimatelyintense forms of choco swirl. That's okay, right? I mean worth number of stars, anyway Sure, if you don't mind it in the form of an occassional choclate chip or swirl mixed in with yogurt, nuts, fruits, jellies, fruits, lumps of salt, caramel, flavorings, coffee, nutmeg,coconut, mringue, cinnamon, ginger, etc. If you;re looking for intense choclate, however, this is not the book to find i in.I highly reommend Alice Medrich's book Cocolat. Alice introduced choclate truffles to the world through her iconic shop ( I was a first day customer and have been a fan ever since) She knows her chocolate, and when o go purist and when to add a little something extra. Her choclates are never over powered by gimmicky additives. Maida Heatter, and is another who can always be counted on to deliver choclate that is all about the chocolate.
I can resist anything but chocolate and this tempting tome from confectioner and chef Carole Bloom is for the true chocolate afficionado.Recipes are very detailed and on the professional level, so this is not a cookbook for the chocolate fancier who wants a 1-2-3 easy dessert. These are serious, heavy duty chocolate recipes that call for ingredients with specific cocao content or such specialty ingredients as cacao nibs, Dutch processed cocoa powder and chocolate extract.Every recipe offered by Bloom is a sweet chocolate dream, lovingly illustrated with plenty of preparation and storage tips included to allow every chocolate creation to be an impressive masterpiece.
